Citrus fruits belong to the genus Citrus and are one of the most important economic products around the world, whose business is highly dependent on the quality before and after harvest. Evaluation of quality parameters is one of the most important techniques in fruit harvest management. Knowledge of fruit physical properties is essential for designing post-harvest equipment such as cleaning, sorting, grading, and packaging. This research was conducted in order to investigate some physical and chemical characteristics of fifteen Khuzestan citrus cultivars in the form of a completely randomized block design in the laboratory of the Faculty of Agriculture of Shahid Chamran University of Ahvaz. The results showed that the physical and chemical properties were affected by the cultivar, so that among all the cultivars, the highest fruit length-to-diameter ratio (2.68), sphericity coefficient (92.47), fruit firmness (82.09) and flavonoids were found in Eureka lemon, Marsh grapefruit, Tomangah grapefruit and sour orange, respectively. White grapefruit had the highest weight (363.2 g), circumference (32.74), area (85.36) and mean arithmetic diameter of the fruit (29.75) among all the cultivars tested. The mean geometric diameter of Eureka lemon increased by 64.8% compared to stone lemon and by 11.89% compared to sweet lemon. The fruit firmness of Eureka lemon was 14.10% compared to stone lemon and 38.97% compared to sweet lemon. The phenol content in Tomanganah grapefruit was 1.36, 29.35 and 9.55% higher than that of White, Marsh and Red Blush grapefruits, respectively. The lowest soluble sugar content (6.35 mg/g) was found in Stone Lemon and the highest soluble sugar content (49.9 mg/g) was found in Clementine. In general, the results showed that the physical and chemical properties of citrus fruits were significantly affected by the cultivar and each cultivar had unique characteristics in bioactive compounds and quality indicators.
