Apples can be stored for long periods, especially using controlled atmosphere storage systems; however, like many fruits and vegetables, they are subject to fruit weight loss. Water loss during postharvest storage can cause skin wrinkling, reduced texture, reduced appearance quality, and reduced marketable weight, ultimately reducing the income of orchardists, storekeepers, and other supply chain actors. Preharvest factors affecting the amount of weight loss in apples include climatic conditions, cultivar, fruit size, tree age, orchard management, nutritional status, and stage of maturity at harvest. Postharvest factors such as storage temperature, relative humidity, type of storage system, and storage duration also play a decisive role in the severity of juice loss. The aim of this article is to examine the factors affecting apple waste throughout the supply chain. In this review, the interrelationship of pre-harvest and post-harvest factors and their role in the management of apple weight loss and waste have been analyzed in an integrated manner. Finally, this scientific review provides practical solutions to reduce water loss, maintain storage quality, and manage apple waste in the supply chain.
